Recipes from the Bus Trip

Chicken Wild Rice Soup

1 C. Onion (chopped)
2 Celery Ribs (cut in pieces)
2 Carrots (diced)
1/2 C. Butter
1/2 C. Flour
4 C. Chicken Broth
2 C. Wild Rice (cooked)
2 C. Cream
2 C. Chicken (cooked)
1 tsp. parsley flakes
1/2 tsp. salt & pepper
1/4 tsp. basil
Melt Butter, saute onion, celery and carrots until onion in transparent.  Reduce heat.  Blend in flour.  Gradually add broth.  Bring to a boil, boil 1 minute.  Reduce heat, add rice, cream, chicken, parsley, salt and pepper.  Add basil.  Simmer for 20 minutes.  DO NOT BOIL!  Serves 10-12 people.
Method for cooking wild rice:
1 C. raw wild rice
3 C. water
4 tsp. granulated chicken bouillon
Rice rice thoroughly and put into a covered baking dish.  Add the water and bouillon.  Cover and bake at 350 degrees for 1 1/2 hours.  Check rice after 1 hour.  If more water is needed, add water and fluff with a fork.  Continue baking for the additional 1/2 hour.  Should be moist - not dry.  Cooked wild rice may be frozen for use later.
 

Spring Green Salad

2 bags of baby lettuce
1 bag craisens
walnuts
Opt. feta cheese
Dorothy Lynch salad dressing

Place lettuce in a bowl, drizzle dressing over lettuce and toss until leaves are coated. Top with craisens and walnuts and cheese if desired.  Serves 8.

6 Hour Oven Stew

2 pounds stew meat
1 large can of diced tomatoes
2 C. diced celery
8 carrots diced
8 oz. frozen peas
1 package lipton onion soup mix
1/2 C. Red Wine
1 T. salt
1 T. sugar
3 T. Minute Tapioca

Place all ingredients except the peas into small roaster.  Mix and place in a 275 degree oven for 6 hours.  After 5 1/2 hours stir in frozen peas.
Serve over rice or mashed potatoes.  Serves 8 - 10 people.
